Spiced Pumpkin Pancakes
I’m not sure if its the drop in the temperature or the excitement of Thanksgiving being just around the corner, but recently I’ve been having quite the taste for pumpkin flavors. Lucky for me, I came across this great recipe that will bring pumpkin to the breakfast table. I hope you enjoy these flapjacks just as much as I do. They are packed with fiber and Vitamin A, and at only 99 calories a piece, you can enjoy them worry free!
Ingredients:
1 cup whole-wheat pancake mix
1 cup cold water
1/3 cup canned pumpkin
1/2 tsp ground cinnamon
1/4 tsp ground ginger
Directions:
1. In a medium bowl, lightly whisk all of the ingredients together. Mix until batter is combined but still lumpy.
2. Spray griddle with nonstick spray, place on medium heat.
3. Spoon 1/4 cup of batter onto the griddle, and allow to cook for about 2 minutes or until bubbles. Flip and repeat!
4. Serve and enjoy! Optional... top with maple syrup.
Recipe makes 8 pancakes.
